Simple Roasted Wood Duck




Start with one wood duck, plucked with skin on. Cut up a small McIntosh apple and stuff cavity of duck as full as you can with it. Preheat oven on bake to 350 degrees. After placing wood duck in a glass baking dish cover it with orange marmalade until it will not hold any more and it starts running down the sides. Cover with a glass lid and roast for forty minutes. Remove lid and roast for five minutes to allow the skin to brown a bit more. The breast should be light pink against the breast bone. If you prefer your duck cooked medium reduce cooking time by ten minutes.
